INGREDIENTS

  • 1000ml

    Swanson Clear Chicken Broth

  • 1000ml

    Water

  • 250ml

    Shaoxing wine

  • 1

    Whole chicken, chopped into bite-sized pieces

  • 1 tbsp

    Dried wolfberries

  • 10

    Dried longans

  • 10

    Dried red dates

  • 10 strips

    ‘Sa sem’ (沙参/Glehnia root)

  • 10 strips

    ‘Yug juk’ (玉竹/Polygonatum odoratum)

INSTRUCTIONS

Step 1:

Prepare ingredients:

  • Rinse all dried fruits and Chinese herbs.

Step 2:

Simmer the broth:

  • Place rinsed dried fruits and herbs in a pot, and add Swanson Chicken Broth and water.
  • Simmer until broth is well-flavoured (approx. 30 minutes).
  • Stir in Shaoxing wine after simmering to preserve its aroma and flavor.

Step 3:

Cook the chicken:

  • Add chicken pieces to the broth and cook until tender.

Step 4:

Serve:

  • Serve hot with a ladle of broth and chicken in each bowl.

TIP:

  • Add Shaoxing wine last. Adding it too early may cause the wine flavour to evaporate.
